Chewton Glen is known as one of the UK’s most iconic luxury hotels, but tucked away within its beautiful grounds is an experience that many people don’t realise exists, The Kitchen Cookery School.
As someone who loves cooking, I was excited to spend the day learning how to make authentic Spanish tapas from scratch. What I didn’t expect was just how immersive the experience would be. From preparing every dish ourselves to sitting down at the end of the day to enjoy everything we’d cooked, it felt less like a class and more like spending the day with friends who just happened to be incredibly talented chefs.
Arriving at the Cookery School
The Cookery School sits within the grounds of Chewton Glen Hotel, just a short drive from the Dorset border.


Walking through the doors, you’re welcomed into a bright, contemporary teaching kitchen with individual workstations, professional equipment and views across the gardens. It immediately feels relaxed and welcoming, whether you’re an experienced home cook or someone who simply enjoys good food.


After coffee and introductions, the Chef talked us through the day ahead before introducing the menu we’d be creating.
Learning to cook authentic Spanish tapas
Our class focused on authentic Spanish tapas, with every dish prepared from scratch under the guidance of the Chef.
Throughout the day we learnt how to make:
- Pan con tomate (Spanish tomato bread)
- Gambas al ajillo (Spanish garlic prawns)
- Spanish tortilla
- Pork skewers
- Romesco sauce
- Padrón peppers with Manchego
Rather than simply following recipes, the chef explained why each technique mattered, sharing tips that were easy to take home and recreate.
One of the things I loved most was that it never felt intimidating. It was such a relaxed atmosphere that you could ask questions, learn at your own pace and simply enjoy the process.
Lunch beneath the vines
Halfway through the class we paused to enjoy some of the dishes we’d already prepared.
Lunch was served outside beneath the vines overlooking the gardens, and it was probably my favourite moment of the day.






Sitting in the sunshine with freshly made pan con tomate, garlic prawns and a cold drink felt wonderfully relaxed.
Back into the kitchen
After lunch it was time to finish the remaining dishes.
As the afternoon went on, everything started coming together. Watching individual ingredients transform into a colourful tapas feast was incredibly satisfying, especially knowing we’d prepared every element ourselves.
The chef was always nearby to offer guidance, but they also gave everyone the confidence to cook independently, making the experience feel rewarding rather than instructional.
Sitting down to enjoy everything we’d cooked
The best part of the day was sitting down together at the end to enjoy the meal we’d spent hours creating.




Each dish was beautifully presented before being paired with a delicious glass of James Martin Chardonnay.
